1 Optimal preheating of an espresso cup

چکیده
1 Optimal preheating of an espresso cup At time t = 0, boiling water (that is, water with temperature 100 ◦C) is poured into an espresso cup; after P seconds (the preheating time), the water is poured out, and espresso, with initial temperature 95 ◦C, is poured in. (You can assume that these pouring operations occur instantaneously.) The espresso is then consumed exactly 15 s later (yes, instantaneously). The problem is to choose the preheating time P in order to maximize the temperature of the espresso when it is consumed. We can model this situation as follows. We take the temperature of the liquid in the cup (either water or espresso) as one state; we model the cup using an n-state finite-element model. The vector x(t) ∈ R gives the temperature distribution at time t: x1(t) is the temperature of the liquid (water or espresso) at time t, and x2(t), . . . , xn+1(t) are the temperatures of the elements in our model of the cup. All temperatures are in ◦C, and t is in seconds. The dynamics are

Neglected Food Bubbles: The Espresso Coffee Foam
Coffee beverage known as espresso, must be topped by a velvety thick, reddish-brown foam called crema, to be considered properly prepared and to be appreciated by connoisseurs. In spite of the relevant role played by crema as a quality marker, espresso coffee foam has not yet been the subject of detailed investigations. Only recently, some aspects of the Physics and Chemistry behind the espress...

HPLC analysis of 20 commercial espresso coffees revealed 6-fold differences in caffeine levels, a 17-fold range of caffeoylquinic acid contents, and 4-fold differences in the caffeoylquinic acid : caffeine ratio. These variations reflect differences in batch-to-batch bean composition, possible blending of arabica with robusta beans, as well as roasting and grinding procedures, but the predomina...
متن کاملImpact of crema on the aroma release and the in-mouth sensory perception of espresso coffee.
A set of six espresso coffees with different foam characteristics and similar above cup and in-mouth flavour sensory profiles was produced by combination of two varying parameters, the extraction pressure and the filtration of the coffee beverage. The coffees were subsequently evaluated in a comparative manner by a set of analytical (headspace, nose-space) and sensory (Temporal Dominance of Sen...
متن کاملEspresso Coffee Consumption and Risk of Coronary Heart Disease in a Large Italian Cohort
BACKGROUND The relationship between coffee consumption and coronary heart disease (CHD) has been investigated in several studies with discrepant results. We examined the association between Italian-style (espresso and mocha) coffee consumption and CHD risk. METHODS We investigated 12,800 men and 30,449 women without history of cardiovascular disease recruited to the EPICOR prospective cohort ...

BACKGROUND Coffee is an important source of bioactive compounds, including caffeine, phenolic compounds (mainly chlorogenic acids), trigonelline, and diterpenes. Several studies have highlighted the preventive effects of coffee consumption on major cardiometabolic diseases, but the impact of coffee dosage on markers of cardiometabolic risk is not well understood. Moreover, the pool of coffee-de...
